2012 Chosen FEW

"This blend of Cabernet Franc, Syrah and Cabernet Sauvignon is from one of Niagara’s superior vintages showcasing dense colour and outstanding depth and breadth of flavour. Alluring aromas abound—cedar and dried herbs, ripe berries, plum and cherries, spiced vanilla and toast. Velvety texture caresses the palate with ripe tannin and clean acidity framing tasty cassis, black cherry and raspberry flavours. Notes of cocoa and spiced toast join a touch of pepper adding warmth to the lasting, dry finish of this medium-full bodied, stunning red. Displaying excellent balance and fine craftsmanship, this is an elegant, cellar-worthy wine showcasing premium Niagara fruit and adroit winemaking. "This is a blend of cabernet franc (38%), syrah (37%), and cabernet sauvignon (25%). The “chosen few” are the barrels selected for this wine, which is made only in years considered superlative; the preceding vintage that met the test was 2007. Each variety was vinified and aged 18 months before the blend was made, and it was given some further aging. What this process delivers is a richly textured, well-structured wine, with excellent balance and impressive complexity. The fruit-acid balance is right-on, and the tannins are supple, ripe, and nicely integrated now. It’s a real pleasure to drink and although you can hold it through to 2020 and beyond, I would drink it in the next couple of years, before the secondary flavours start to click in." ***** (Rod Phillips)

“Only made in the best years, this, the 2nd vintage of this wine (the first was in 2007), is truly impressive.  The final blend of 38% Cabernet Franc, 27% Syrah and 25% Cabernet Sauvignon was a selection of Fielding’s best barrels and there was no fining or filtering whatsoever. Medium to full body; there is a rich texture and lots of smoke, chocolate, dark cherry cassis, blackberry, black pepper/spice and olive.
